On the way home from work Sunday I stopped off at the local grocery store and picked up an 8 pound Boston Butt. I made sure it had plenty of fat on it. When I got it home I scored the fat and rubbed it with a nice wet paste of Garlic, Onion, two kinds of peppers and a bit of Olive Oil. It was then wrapped in plastic and placed in the fridge.
This morning I pulled it out and set it on a platter to warm while I set up the smoker. I had plenty of wood chips and filled the water dish. When the smoker had warmed to the proper temp. and the smoke box was starting to smolder I added the meat and went back inside to defrost. (It was 37° out.) Hell let's be honest. I went back inside to snooze out on my recliner as this was going to take a while.
All day the meat slowly cooked and smoked. Every so often I had to go out and add some wood chips to the smoke box. I kept the smoker at just the right temp. even when I had to replace the gas bottle.
I kept busy while doing this. I took down and packed up the Christmas Lights. I raked the yards and froze my tail off. I watched my neighbors bringing in their new heaters. (Shudder)
So then the meat finally hit 190° and it was done. I pulled it off the rack and carried it in where it sat for an hour. Oh man did it look good. The fat was gone and as I pulled it from the rack it was trying to fall apart.
After letting it sit for the required hour I started shredding it with a couple of forks. As I got a small pile pulled apart I put it in the slow cooker to keep warm. Finally it was done and I was salivating. I split some Onion Rolls and tossed them on the broiler for a minute or three to toast. When they were done I added some meat and just a bit of BBQ Sauce.
We're talking just a little bit of heaven.
