Usually it’s because they’re older or have some egg yolk mixed in. Fresher, clean bowl, room temp, and with a bit of cream of tartar always works for me.
I actually used egg whites from a container. But I made two mistakes. One, they weren’t room temperature and two, I added sugar too quickly to the mixture. So now I’m waiting for another egg white to be room temperature. Whisk it away and then add it to the sad not so thick mixture to give it the ‘oomph’ it needs. Or at least that’s what google said.
The prepackaged kind are runnier and harder to whip in general, so even if you did everything perfectly it would be a bit more challenging.
