I saw Ratatouille today. It made me a little sad that I can't cook.

Had this last night in the restuarant - try it, it's fucking gorgeous. My version had just oats, icecream and Talisker whiskey.

Ingredients:
3 oz (half cup) pinhead or coarse oatmeal
Half pint double cream
1 tablespoon Drambuie (optional)

Method:

Toast the oatmeal in a frying pan on a high heat until lightly brown. Whisk the cream into a soft consistency and mix in the oatmeal and Drambuie (alternatively, use a few drops vanilla essence or other flavouring of your choice). Serve in tall glasses. A popular variation is to mix in 6oz (one and a half cups) of fresh raspberries. Or use vanilla ice cream instead of cream.

Oh, that sounds GOOD.
 
Food allergy results mean there's a lot I can't eat.

As a reward, I made myself a smoked salmon spread I can eat on rye crispbreads (no wheat, no eggs).

Yummmm!

Definitely picked the right lady to share dinner with.

I can't get salsa in a store any more. It has to be exactly right, addictive. Must be homemade to qualify.

I made mine with my tomatoes roasted over the flame on the stove, with a few fresh mixed in, cilantro, chopped onion, fresh garlic, chile pequin (only need 2-3 for a big bowl, as these are extremely hot!), and a little lime juice.

I also just discovered something weird and yummy. In the mood for barbecue and I don't want to cook or wait. Pork rinds dipped in a mixture of vinegar, Splenda and a ton of hot chili paste...is really good. Or at least my tongue can no longer discriminate between really fucking yummy and "I've been burned so badly I can no longer respond." Which is right where it should be.

Things get really weird in my head and then in my kitchen. It doesn't always work out this well.

Yeah. Every now and then I go on a low carb kick when I feel my sense of taste and appetite have just gotten jaded and I need to reset them. Kinda like rebooting the computer if it freezes up.

This time I'm glad I did. I'm going to remember this.

The dip is from a Thai base, I usually put it in with red onion and cucumber, and it often has some plum sauce and cooking down to the right consistency. I was thinking that would also make a good barbecue sauce. But that means, you know, work. This was just taking two or three recipes that would take a few hours of waiting or marinating and...you know...effort, and making a substitute in five minutes.

Go me!

Okay, here's the salad - I just reverse engineered it from a Thai salad I had at a restaurant in Los Angeles, skimmed recipe books until I found a decent dressing. So Tommy Tang gets credit:

This is his recipe for cucumber dip, he make it in smaller batches and uses it for dipping chicken, I also double or triple this recipe and splash it over sliced cucumber (maybe three or four of them) and sliced red onion (one big one, or two small ones), making a salad-bowl sized serving of the stuff, chill it for a day or so, and then sprinkle chopped raw peanuts on top of each serving:

1/2 cup water
1/2 cup sugar
1/4 cup rice vinegar
1 Tbsp plum sauce
1/4 tsp paprika
1/8 tsp fresh chili paste
1/4 tsp salt
1 Tbsp chopped cilantro (here I just grab a bunch and pull the leaves off, adding it to the salad, I LOVE cilantro)

Combine water, sugar, vinegar, plum sauce, paprika, chili paste in a small saucepan and bring to boil. Reduce heat to low and simmer 2 minutes.

It's a really distinct, unbeatable summer salad for me. Very strong and addictive.

I experienced fruitgasms galore this weekend. Mangoes, watermelon, and blueberries, all at the peak of ripe freshness, all amazing.
 
I was told by the wife that I outdid myself the other night. She claimed that I gave her an orgasm...from dinner. Heh...if only.


Actually, I made stuffed chicken breast, (baby cherry tomatoes, two kinds of crumbled cheese, garlic, celery and onion) Breaded in Garlic bread crumbs.

For vegetable I did Crimini mushrooms done in butter.

Second vegetable was asparagas, done in butter with several herbs (dried) and some sea salt. I also had some crushed garlic added to it as well.


Salad was spinach with hard boiled egg, tomatoes, cucumber slices, grated cheese, Raddicho, and a slight shake of hand ground pepper/sea salt. Tossed in a vinegarette dressing.


After hearing her go on and on about it, I thought that just maybe I'd get lucky.












Well...she did at least like what I made for her as far as dinner went.

Maybe next time I'll get luckier. ;)
