Medium Rare. Nope. I don't know what you mean by that, but I don't like a large amount of salt in my food.

Some people cannot eat wheat. Some are salt restricted. Others hook up on tuesday.
 
Today, I cooked a delicious pork tenderloin which I had seasoned, marinated, and refridgerated over last night. With it, I had some collard greens. For dessert, I had bread pudding with french vanilla ice cream. YUM!
 
I love making choc. chip cookies, but never found a recipe that I was thrilled with (most seem to be the same ingredient amounts as Toll House). These bake up great and the toasted nuts make a big difference.

The World's Best Chocolate Chip Cookie

3/4 cup sugar
1 cup brown sugar
1 cup butter
1 tbsp. vanilla
2 eggs
3 cups flour
3/4 tsp. baking soda
3/4 tsp. salt
2-3 cups semi-sweet choc. chips (extra chips are never a bad thing)
1 cup chopped pecans, toasted.

To toast the pecans...
I put them on a tray in a cold oven and set it on 300 degrees. I find that by the time it finishes pre-heating, they're perfect. Be sure to let them cool before adding to the batter or chips will melt.

Preheat oven to 350 degrees

-Cream the sugars and butter. Add vanilla and eggs. Mix well.

-Combine flour, baking soda, and salt.

-Add dry ingredients to wet. Add chips and nuts.

-Drop in round balls on baking sheet.

-Bake 10-12 minutes.
 
I was craving different stuff today, so I cooked flautas with avacado and tomatillo salsa...
For dinner and my lunch at work, saffron rice with tomatoes, peppers, onion, thin sliced beef, cracked pepper, and a little bit of garlic.

Made some killer guacamole today.

Avo, tomatillo, cilantro, lime, half a serrano, salt, scallion.

Ate it with carrot sticks... It hit the spot and I have leftovers!

i have salmon on a cedar plank in the bbq, right now......
