Here's the EASY recipe for my bread!

2 cups white flour
2 cups wheat flour
1 cup seed/nut mixture
2 tsp salt
1 tsp yeast
2.5 cups water

Mix all together in a large bowl. Cover with plastic wrap for 12 - 18 hours. I've actually left mine for 24 hours.

To Bake:
Preheat oven to 450 degrees. Place covered pot in oven while it's preheating. I use a cast iron Dutch oven. Sprinkle a small amount of flour around the top and edge of the bread dough. Use a plastic spatula to form a ball of dough in the bowl. Turn the dough out onto parchment paper that has a bit of flour or cornmeal scattered over it. When oven is preheated, carefully take the pot out of the oven, uncover, and place the parchment paper with the dough inside the pot. Cover and return to oven for 20 minutes.

Then remove the lid from the pot and reduce the oven's temperature to 375 degrees. Continue to bake the bread for another 20 minutes. When done, carefully remove the hot pot from the oven, take hold of the parchment paper and lift the loaf from the pot. Place on a wire rack to cool. It should sound hollow when thumped on the bottom of the loaf. Let cool for at least 10 minutes before digging in!

If you don't have a Dutch oven, any covered pot will work. I've even made this in a bread pan. I inverted another over the top then clamped them together with large binder clamps.

My seed/nut mixture:
You can add whatever you like to this! I get mine from the bulk bins at the local store. I make up a mixture and keep it in a Zip-Lock freezer bag. It makes it easy to just scoop out what I need. I do keep the bags of seeds and nuts in the freezer to keep them fresh.
Almonds
Pistachios
Pecans
Millet
Chia seeds
Hemp hearts
Sesame seeds
Pepitas (pumpkin seeds)
Flax seed, whole
Flax seed, ground
Quinoa
Wheat germ
Sunflower seeds

PLEASE don't do that RJ! If it's itching, try some benadryl cream. A cool cloth will help also. You can try ice on for 20 minutes off for 20 minutes, too.
 
Should I wear a hat? I am 5 ahem 7. 178cm and slimish...ok well a tad not heavy but you know.
Tribly? not a sombrero to the office of course. My face doesn't suit a baseball cap with the price on thank goodness...

At 178 cm, you're 5' 10", English guy! Are you still in Haiti? You should probably wear a hat. If you don't like a baseball cap, try an Indiana Jones type hat. It will keep the sun off your face and your neck.
 
I think I'm going to try an old practice that I haven't done since my Shotokan Karate days; Fourty years ago.
I'm going to force myself into "Transcendental Meditation" for healing... it scares Mrs Rj because it makes me appear to be in a coma for about an hour, or two... :rolleyes:
