Maybe I should consider something similarI made the ready to eat even on the go breakfast egg muffins. Even after they cooled and stored in the refrigerator, a quick microwave heating, brings out the flavor. Make it once, then have it for when you do not want to make a breakfast.
The fiber is in the vegetables. Basic recipe: chop favorite vegetables and sauté them. Let cool and then spoon as much as you want into the cup cake tins. Scramble 3 eggs with quarter cup of chicken broth and add your salt, pepper and spices of choice – mine was turmeric and parsley. Pour scrambled egg mix into the cups covering the vegetables and top with cheddar or cheese of your choice. Bake at 375F for 20 minutes. Add as much fiber as you want.Maybe I should consider something similarJust need fiber in there, too.
Depends on the veggies - and veggies and grains have different kinds of fiber.
