I think our farm truck had that. Was it the dial that you turned to increase the revs when the engine was cold?

I always forgot to take the bike choke off

That depends on if it's a Diesel or a petrol engine. It does the same but in different ways. On a Diesel you increase the fuel pump so you'll get more Diesel when the engine is cold and on a Petrol engine you decrease the air (choke) with the same result.
Today all cold starts are controlled by the car computer and done automatic. (I hope that was not to boring stuff)

Well, mine runs so rich and revs so I'd notice at once if I've forgot it. In the summer I just use it to start the engine and almost immediately push the knob back in again before I drive off.
