Maple-walnut and Maple-Cherry are stunning together. Add all three and your project is unspeakably beautiful.
I made one out of butternut, which is considered "soft" but it has lived three years on my bench as a general purpose mallet. I made it so I could retire the one my dad cut out of a single piece of apple. (Still hungry, @BrendaD ?)
