Natural gas would be great I think the regulator might be different and that is certainly something that you can change out easily and the jets are probably different. Any grill that you're interested in contact, the manufacturer and ask them if they have a natural gas kit for it.
Even a used one. I picked up a used one ($20 on half price day at Goodwill) that I intended to use as a fire box for a to-be-built smoker; iit cleaned up with Clorox bathroom cleaner so nicely that I ended up buying a tarp to cover it and it's now my good grill
Get a known brand propane grill that makes you happy. Get a conversion kit to go from propane to cng.
You won't find a conversion kit out there for a Weber.
I'm afraid of messing up a converting project when it comes to fuel and flame. Webber has some options, but local places don't have the 2 burner ones in NG. I'm not looking for colossal, since it's the two of us for the most part.
Charcoal.
They did pique my interest, but I know myself. I'll never start prepping in time to get the temp right for cooking dinner.
