The tenderloin was choice so not much marbling. Wrapped it in bacon and cooking to internal temp of 124. Rested about half an hour. Sliced into one inch bacon-wrapped medallions (about a dozen). It was cooked to a perfect medium rare. Cooking temp was around 320. I'm going to try to get it down to around 270 for the next one and extend the time. For me this is like a science experiment, and I change the variables to see what they do to the end results.
