Pizza should be Italian.
It doesn't matter whether the makers are in New York, Chicago, or London if they, or at least their Mommas, were Italian.
In the Kent seaside town of Broadstairs there used to be a large sign painted two stories high on the side of a restaurant. It read "Canadian Pizza". Why?
Who would be proud of promoting or making Canadian Pizza? Canada has better foods to export to the world than Pizza.
In another Kent seaside town there is an Italian restaurant run by Italians. They do Pizza from Naples. It is so good it is recognised by the Naples Pizza makers association as the ONLY maker of proper Naples Pizza in the United Kingdom. Yet its prices are lower than the national Pizza chain outlet a hundred yards away. I'm not giving the name or town because you already have to book three weeks ahead to have a meal there, and forty-eight hours ahead for a takeaway Pizza.
In a Suffolk village where some of my relations live a Chinese family run the fish and chip shop. Their fish and chips is of reasonable quality for an inland village but their Pizza is good, made in a proper Pizza oven. When Chinese Pizza is better than nationwide chain Pizza, either that Chinese family are doing something right, or the chain is selling crap to drunken customers.
