It's easy.
Salt and pepper the chicken breasts and then using the flat side of a meat mallet, flatten them out to an even-ish thickness.
Place flour, beaten egg + a little water, and bread crumb ( I do a mix of panko and Italian style) in 3 separate containers and coat each breast in that order. If you prefer a thick coating dip it back in the eggs and then once more in bread crumb.
Heat a pan with enough oil for a shallow fry and fry the breasts. Too keep them crispy I drain them on wire racks.
Set your oven to broil, layer pasta sauce of your choice, fresh mozzarella, and Parmesan on the breasts and pop them int he oven till you get some nice color on the cheese.
Or, just show up at Yossi's with a bottle of wine.
