I'm quite good at cooking hard-boiled eggs, but terrible at peeling them. Sometimes they peel perfectly and other times I destroy them. I really don't know what I do differently.

I roll them and peel under water. I have no idea what else to do.
 
Do you get much snow there?? I think that winter is probably my fav season. The more snow we get, the happier I am.

Oh me too. I love winter.

None last year, just a few flakes. The last few winters have been mild. Think it was 2009 or 10 when we had a bad one, total whiteout in late November. I was loving it.
 
Hard Boiled Eggs:

Start with old eggs. Fresh ones won't peel very well.


Put room-temp eggs in a pot of room-temp water.
Put the pot on the stove and turn the stove on.
When the water starts to boil, turn the stove off and cover the pot.
After 12-13 minutes, dump out the hot water and refill with cold water to stop the cooking.

Seems somewhat overcomplicated for boiling a fucking egg.
