I thought that it was supposed to be Sam and me, but I keep seeing people write it as Sam and I.

Fraid so. Sam and I is correct.
yeap apparently. I also say Sam and I (as it sounds right). Correct grammar has it as Sam and me. I forget the reason (bla bla bla when it's explained) but the joy of English is that actually it's only the pedants that give a toss!
So write what you like!

Me and Sam could invite - Sam and me invite (works)
I and Sam would invite - Same and I (merrwh?)
