Lunch: hummus, tomato, black olives and mixed greens on toasted whole wheat bread. I'm slowly coming around to eating a hair more healthfully, but I'm going down kicking and screaming. Just put a mac and cheese into the oven that has a mix of regular elbow noodles and whole-wheat rotini with five kinds of cheese. Should pair nicely with a crisp chardonnay (Grgich Hills Estate Grown, 2011).

Whole wheat and flax seed bread. Pretty dense...couldn't get it to rise enough.

Had a slice with cream cheese and cucumber a slice with butter and tomato.

If you can get Barilla "Pasta Plus" brand in your area, take a look at the side panel they've managed to subsitute protein for carbs. I like the flavor better than whole wheat... made from ground lentils or some such. You have to cook a little softer than al dente though because otherwise the texture seems off to me

I don't have a good substitute for cheese that I can recommend. I find most things that lower fat seem to be less healthy than the fat they replace.

Thanks for the thoughts. I'm working on replacing animal fats with plant-based fat, and overall to make it a lower percentage of my intake. There is no equivalent to cheese; it's magnificent stuff but unfortunately it contains one of the proteins that has been most closely tied to promoting cancer. I won't eat Barilla products because of the company chairman's stated views on homosexuals

Tonight (and as far into the week as I can stretch it, unless I scoff them all down tonight (Bad Lwulf! bad!!)) I am going to whip up a batch of "Papas." / "papas rellenas"




These look like a super delicious treat... I will occasionally take left over mashed potatoes, add chives or bacon or whatever, form them in little patties, dip in egg and Panko and fry them, but this is like the next dimension. Must try this one day!

Indeed, even your simple description of using leftovers sounds enticing too.

My only advice on the papas, is to avoid all recipes suggestions on size. Unless you are a very adept cook, make them the size of a small orange (requiring two to three bites to eat each). Otherwise you will have more filler than potato.

In all honesty, that's the size of the papas that I first had opposed to the golf ball sized ones in every recipe I've seen.

Left overs from yesterday. Chicken breasts in a golden mushroom sauce and jasmine rice. Tastes better tonight and it was good last night. Lovely red wine to wash it down.

Cumberland sausage, jacket potatoes, ratatouille, followed by chocolate brownie cupcakes and/or fruit salad (pineapple, tangerine, flame grapes, cherries).
 
My own version of what I'm told is basically a Pasta Primavera.

Whole wheat spaghetti, peas, carrots, lima beans, broccoli, cauliflower, (occasionally cherry tomatoes (no sauteing for the veggies)), with a boneless chicken breast baked to golden brown with "Perfect pinch" garlic and herb seasoning.
No sauce or vinaigrette.

(my standard fair for the past 7+ years - I won't mention this again)

Roasted tomato and basil soup is in the crockpot and a loaf of herbed whole wheat bread is going in the bread maker. Automated healthfulness at its finest. :D Now to find a good wine to accompany.
 
Homemade chicken chili, cornbread, salad. A few squares of chili chocolate for dessert. Been hooked on chili chocolate lately...

This morning for breakfast I baked whole wheat muffins from scratch. Mister had a late start so it was great to be able to give him something portable. ;)
 
Eggplant parmesan and green salad. Bakery-made cake for dessert - I claimed the German Chocolate.
