It wasn't the entire sig that I was trying to center.
I have the image and the text where I want them
I just wanted the text center aligned, but still hard up against the image.
You know, like this:

I'm still trying to find a gif similar to your 'eyes in the cave' or something appropriate for a tiger - but with a bit of humour.

The same way you change the font size in a post.
All you have to do is put {SIZE=#} before the text in your sig, and {/SIZE} after it.
(I switched [ with {, and where I put # is the size of the font you want)
