I always liked the Nazareth version of this flight tonight that you referenced near the bottom of the page. I had that album when I was a kid (Loud N Proud) and it was my favorite cut on the disc.

Now, my favorite Joni song of hers is Coyote. I know that song from the Last Waltz movie soundtrack where Martin Scorsese did a documentary of the last concert by The Band.

I always thought her song lines

Coyote's in the coffee shop
He's staring a hole in his scrambled eggs
He picks up my scent on his fingers
While he's watching the waitresses' legs

were incredibly observant of the male nature.

Oh yeah, and Counting Crows have my favorite cover of Big Yellow Taxi.
