Answering posts always last page

I've been searching hours to find an answer to this problem, I feel should be obvious. When I add a response to a post, either quote or quick reply, my post always ends up the very last page...

Yes, that's how it works. Newest post goes to the end of the line.

Go to your "User Control Panel", click on "Edit Options", scroll down to the "Thread Display Options" section, find the "Thread Display Mode" and choose "Linear - Newest First", then hit the "Save Changes" button at the bottom of the screen. This way, you don't have to go all the way to the very last page of that thread to locate your post. I hope this helps.
