I'm writing a gay male story. Do actual gay men talk about "pitching" and "catching"?

I've heard it used, yes. I don't know how current it is.

The only time I've ever heard "pitching" and "catching" is from straight folks talking about gay men.

Us queers use top/bottom/versatile, at least in my experience.

I've heard gay men use it in a joking way. It is a wee bit old fashioned tho. Maybe use it to characterize a silver fox?
