I'm not quite sure what Molly does with either the strops or the blades,
but I'll keep well downwind of it; just in case.
I don't have a strop. I don't own a straight razor. What I have is a large collection of knives.
Nothing that would interest anyone here. I cook. I cook a lot. I'm a good cook and that requires the proper tools.
That raises an interesting question, Molly.
How do you sharpen a bread knife, for example ?

What the Bear said. I have a truly fine bread knife. I have never sharpened it. I just don't use it for anything but bread. If you try to cut concrete, it will make it dull.
and if you try to cut the meat ?
A bread knife is not the proper blade for cutting meat. It will not only dull the knife, but it will also chew up the meat. You need a proper carving knife or a butcher's blade.

Whatever happened to "it has a sharp blade, therefore it cuts?"
But I know what you mean; I feel exactly the same way about my hand tools - particularly screwdrivers; [the right one for the job !].
