How do we know how most of it sounded? For a long time it was handed down and taught by ear like stories being told orally.
We started writing music later in the time period but surely most of it is just a guess as to it's sound. I assume anyway and we all know what happens when I assume. You're an ass.

A tad mean

You could say much the same about a modern cover, or even 18c symphonic music. What you hear is how it might have sounded if a like minded troup of underpaid musicians got together to play it. It almost certainly was not played as well and by whatever instruments could be cobbled together. We can enjoy it just as much as we enjoy a well played cover down the jazz club.

How do we know?

We have surviving instruments and some indications of early musical notation:
