Brisket - slow cooked for 18 hours in pecan or oak/hickory mix
Pork loin - lightly seasoned for about 7 hours with pecan smoke
Whole chicken - special rub till it falls over (AKA beer in the rear chicken)
Turkey - 14 lbs. for about 11.5 hours with some sweet pecan smoke.
As much beer as possible. It always makes everything taste better.

It's actually quite easy. Chicken breasts chopped up in cubes (or bigger), marinated in lemon (or lime) juice, green peppers, onions and zafran. Then, put on skewers and barbecued.
