I'm cooking tonight
I'm cooking a couple of pork picnics, about 10 lbs apeice. I rubbed them well. I love rubbing my meat  . Now they're cooking in a 20 hr smoke bath, a combination of hickory and pecan wood.

In case you're wondering I prefer an electric smoker, with lava rocks spread around so I can suspend chunks of wood over the elements. It gives great smoke, in a controlled manner. I've used Char Broil cookers and this Brinkman and it is far superior to the Char Broil for about the same price.
6 hours under smoke
