I approve of really sharp knives right up to the time I don't take my fingertips out of the way.  The last time I cut myself, I was talking on the cell phone to my mother and cutting up meat for dinner. Never try to catch a cell phone when it slips away, especially when you have a very sharp 8" French knife in the other hand!
